A Classic Alpine Hut Dish

Let’s be honest: no one hikes up to a mountain hut just to “enjoy the view.” No – the true hero of the story is clearly Kaiserschmarrn.

 

After a strenuous hike, you’ve definitely earned this delicious treat, and surrounded by fresh mountain air, this sweet specialty tastes simply heavenly.

 

Quick and easy to prepare with just a few ingredients, this culinary delight is simple to make at home – bringing a touch of alpine atmosphere and mountain hut feeling straight into your own kitchen.


Shopping List

220 g flour
50 g sugar
250 ml mik
5 eggs
A pinch of salt
A little lemon zest
A handful of raisins
A handful of sliced almonds
For frying clarified butter
For dusting powdered sugar
For serving applesauce

Preperation

  • Prepare the batter: Beat the eggs with the sugar and lemon zest until frothy. Add the milk, then gradually stir in the flour until you have a smooth batter.
  • Optional: Rinse the raisins and soak them in rum. If children will be eating, you can soak the raisins in water instead. Rum gives them a more refined flavor. Stir the raisins into the batter. If you don’t like raisins, simply leave them out.
  • Heat some clarified butter in a pan. Pour in the batter so that the bottom of the pan is covered with a layer about 1 cm thick.
  • Once the underside is golden brown, turn the pancake in one piece. Using two forks or a spatula, tear it into bite-sized pieces and continue frying until they are also golden brown.
  • Repeat the process until all the batter has been used. Transfer the finished pieces to an ovenproof dish.
  • Optional: Lightly toast the sliced almonds in a little clarified butter and caramelize them gently with some sugar. Sprinkle over the Kaiserschmarrn pieces.
  • Place the dish in the oven and bake at medium heat for about 5–10 minutes so the outside becomes nicely crisp while the inside stays light and fluffy.
  • Dust the finished Kaiserschmarrn with powdered sugar and serve with applesauce.

If there is one dish that tastes like the Alps, cozy mountain huts, and childhood memories, it’s Kaiserschmarrn. Golden brown on the outside, light and fluffy on the inside, and dusted with powdered sugar – this is a dish I simply couldn’t imagine my kitchen without.
