Cinnamon in the Air – Autumn Is Here!
Spring is finally here, along with the colourful Easter season. As the first sunshine brings nature back to life, it’s the perfect moment to welcome spring into your kitchen. A wonderfully moist and aromatic carrot cake is just the thing – a true Easter classic that brings freshness and springtime flavour to your table.
For the cake:
400 g carrots
250 g flour
250 g sugar
200 g ground nuts
2 tsp baking powder
1 tsp cinnamon
4 eggs
250 ml vegetable oil
For the frosting:
300 g cream cheese
100 g icing sugar (powdered sugar)
1 packet vanilla sugar
1 tsp lemon juice
Preheat the oven to 180°C (top and bottom heat). Wash, peel, and finely grate the carrots.
Add the sugar, cinnamon, oil, and eggs to a bowl and mix well using a stand mixer or a hand mixer.
Combine the flour and baking powder in a separate bowl, then add to the batter and mix until well incorporated.
Pour the batter into a greased springform pan and bake in the preheated oven at 180°C (top and bottom heat) for about 40–50 minutes.
Once baked, allow the cake to cool completely.
Decorate the cake however you like! Marzipan carrots, chocolate eggs, or brittle add a sweet and crunchy finishing touch. Get inspired by these ideas and decorate your cake just the way you like it.
