A homemade barley soup is the perfect meal to warm you from the inside on colder days. This wonderful recipe invites you on a culinary journey of discovery, rich in culture and history. Barley soup has been a cherished traditional dish for generations. Thanks to its high nutritional value, it can easily be served as a satisfying main course. But it is just as delicious as a starter at a cozy gathering, paired with roasted chestnuts and a hearty snack platter – our barley soup is simply too good to leave a single spoonful behind.
Dice the bacon, carrots, leek, potatoes, and celeriac into small cubes.
Depending on your taste, you can also add a chopped onion.
Pour 2 litres of water over the rinsed pearl barley.
Add the smoked pork and let it simmer gently for about 2 hours.
About 30 minutes before the end of the cooking time, add the diced vegetables.
Towards the end, remove the smoked pork, cut it into small pieces, and return it to the soup.
Serving Suggestion:
Sprinkle with freshly chopped chives before serving.
