01.09.2023 Recipe for a Delicious Pumpkin Cream Soup

The beginning of autumn is a beautiful time when nature slowly begins to change. The days grow shorter, the weather becomes cooler, and the leaves on the trees turn into vibrant shades of red, yellow, and orange. It’s the perfect season to get cozy and enjoy the culinary pleasures that autumn has to offer.

 

During this time of year, there are many delicious recipes that perfectly match the season. Pumpkin soup is an ideal dish to warm up after a long walk through the colorful autumn leaves. With fresh pumpkin, garlic, onions, and spices such as nutmeg and ginger, you can create a flavorful and comforting soup that delights the palate.

Ingredients for 6 servings You will need the following ingredients:

  • 1 large onion

  • 2 cloves of garlic

  • 30 g butter (or a little oil as an alternative)

  • 1 Hokkaido pumpkin

  • 100 ml white wine

  • 900 ml vegetable broth (or beef broth)

  • 200 ml cream

  • A pinch of salt

  • A pinch of pepper

  • A pinch of nutmeg

Step 1:

Peel the onion and garlic cloves and finely chop them. Wash the pumpkin, cut it in half, and remove the seeds using a spoon. Place the pumpkin halves on a cutting board and cut the flesh into cubes of about 2 × 2 cm.

 

Note:
If you prefer, you can peel the pumpkin. However, this is not necessary when using a Hokkaido pumpkin, as the skin is very thin and becomes soft during cooking.

Step 2:

Sauté the onion and garlic together in butter in a large pot until translucent. Add the diced pumpkin and briefly sauté it as well. Then deglaze the vegetables with the white wine. Next, pour in the broth (clear vegetable or beef stock).

 

Note:
If you prefer to prepare the soup without white wine, simply replace the amount of wine with water or additional vegetable broth.

 

Tip:
If you’d like to add a bit of heat to the soup, you can sauté some freshly grated or finely chopped ginger together with the onion, garlic, and pumpkin.

Step 3:

Season with salt, pepper, and nutmeg. Simmer gently until the pumpkin is soft, then purée the soup until smooth with an immersion blender.

Step 4:

Taste the soup again and adjust the seasoning if necessary. Then refine it with the cream by stirring it in and briefly bringing the soup back to a gentle boil.

Step 5:

Serve the soup in bowls and finish with your favorite toppings. A classic Tyrolean version includes a cream swirl, fresh parsley, and pumpkin seed oil, but roasted pumpkin seeds, crispy bacon, or croutons also make delicious additions.
